When we went to Memphis for the Moon River Festival & my cousin Kim made this delicious Paleo Bread, so naturally I had to get the recipe and try it out! We are always looking for new, delicious, grain free recipes to use.
This one is too good (& easy) not to share!
This recipe comes from Elana's Pantry Website (which has some other amazing looking recipes) I've already bookmarked her page to come back and look around. Luckily, if you click the link, this recipe even has a video accompanying it.
"Paleo Breakfast Bread"
What you need:
1/2 cup creamy roasted almond butter (we used crunchy and it was amazing)
2 eggs (free range eggs for your optimal health)
2 tablespoons honey (try to get local honey)
1 teaspoon vanilla extract
1/4 teaspoon stevia (this is a liquid form-you can get it from Kroger and it looks like this. It's also a great thing to have in your kitchen because it's a natural sweetener)
1/4 teaspoon sea salt
1/4 teaspoon baking soda
1 tablespoon ground cinnamon
1 tablespoon chia seeds (optional--we added for the extra health benefit)
What you do:
Prehead oven to 325 degrees
In a large bowl, with a hand mixer, mix almond butter until creamy
Mix in eggs, honey, vanilla, and stevia
Add salt, baking soda, and cinnamon
Mix well with hand blender until all ingredients are combined
Transfer batter into a well greased 8x8 inch baking dish
Bake at 325 for 12-15 minutes (we learned that 14 burned the bottom a little bit, so we did 12 and then turned the oven off and left it in there an additional minute)
and there you have it!
It's the perfect "coffee dipping" bread
